材料:大闸蟹或小型活蟹3只、姜末1/2大匙、葱花2大匙、面粉4大匙
Ingredients: 3 live crabs, 1/2 tbsp chopped ginger, 2 tbsp chopped green onion, 4 tbsp flour
调味料:酒2大匙、酱油2大匙、糖2茶匙、水1 1/2杯
Seasonings: 2 tbsp wine, 2 tbsp soy sauce, 2 tsp sugar, 1 1/2 cups water
准备过程:要选小一点的螃蟹,每只约200 - 250公克左右,刷洗干净后,每只对剖成两半。
Preparation steps: Choose those small crabs for this dish, about 200 - 250g each, cut each crab into halves.
烹调:
1. 酒盛放在小盘中,把螃蟹的切开面在酒里沾一下,再在面粉中沾一下。
2. 锅中烧热2大匙油,螃蟹边沾粉边放入(切面朝下)煎黄。
3. 撒下姜末和一半量的葱花一起炒香,淋下剩余的酒,再加入酱油、糖和水,盖上锅盖,中小火煮4 - 5分钟,至螃蟹已熟。
4. 剩下的面粉加适量的水,调成面糊,淋到螃蟹的汤汁中,边林边搅拌,使汤汁成浓稠状,洒下剩下的葱花一拌便可关火。
Cooking:
1. Dip the cutting side of crab into the wine, then coat that side with flour.
2. Heat 2 tbsp of oil in a wok, fry the crabs to brown(with the cutting side down).
3. Add ginger and half amount of green onion, stir fry until fragrant, spinkle wine, soy sauce, sugar and water in, cover, cook for 4 - 5 minutes over medium low heat until crab is cooked.
4. Mix remaining flour with some water to make a flour batter, thicken the crab sauce with flour batter, sprinkle green onion on top at last. Serve.
